Henriques & Henriques, Madeira 2001

My rule for matching sweet wines and desserts is to choose something with an equivalent amount of residual sugar. This dessert is very sweet indeed. There’s no point in worrying about calories, so I’ve chosen a full-bodied fortified wine, from the volcanic island of Madeira. This is the sweetest style of Madeira – Malmsey (the Duke of Clarence, in Richard III, literally came to a sticky end when he drowned in a vat of it). It’s delicious, with complex notes of fig, raisin and prune, and the slightly singed character that reflects the way Madeira is aged in hot rooms. It’s very sweet, but its acidity leaves the palate cleansed and cuts through the richness of the dessert.
